泰式酸辣汁燒豬頸肉
Thai Spicy Sauce and Roasted Pork Neck

醃料 Marinate:
豬頸肉450克 Pork neck 450g
香茅1條 Lemongrass X 1
紅蔥頭1個 Shallot X1
大蒜 2 瓣 Garlic X 2 cloves
炸洋蔥1湯匙(自選) Deep fried onion X 1 table spoon (Optional)
生抽3湯匙Soy sauce X 3 table spoon
老抽1湯匙Dark soy sauce X 1 table spoon
糖1 ½ 茶匙Sugar X 1 ½ tea spoon
魚露1茶匙Fish Sauce X 1 tea spoon
青檸汁3茶匙Lime Juice X 3 tea spoon
白胡椒 ¼ 茶匙White pepper X ¼ tea spoon
泰式酸辣汁Thai Spicy Sauce
蒜末1茶匙Minced Garlic X 1 tea spoon
炸洋蔥1茶匙(自選) Fried Onion X 1 tea spoon (Optional)
青檸汁2茶匙Lime Juice X 2 tea spoon
棕櫚糖 5g / 糖 2 茶匙5 Palm sugar X 5g /
Sugar X 2 tea spoon
青檸皮 ½ 茶匙Lime Skin X ½ tea spoon
辣椒1條 Chili X 1
魚露2茶匙Fish Sauce X 2 tea spoon
水20ml Water X 20ml
香菜1茶匙Coriander X 1 tea spoon
把豬頸肉切成兩半
Cut in half the pork neck
醃製至少6小時
Marinate at least 6 hours
將錫紙放在平底鍋上
Put the tin paper on top of a frying pan
加一些油
Add some oil
加豬頸肉
Add the pork neck
用中火煎香
Pan fry with middle heat
當肉轉色時翻轉它們
Flip them when the colour is changing
進食時斜角切成小塊
Cut small pieces with bevel angle when you eat
