宫保雞丁 Kung Pao Chicken (gong bao ji ding)

材料 Ingredients
雞扒2 塊Chicken Thigh X 2
油Oil
薑 6 片Ginger 6 slices
蒜頭 3 塊Garlic cloves X 3
花椒6粒Sichuan peppercorn X 6
乾辣椒10條Dried chili X 10
腰果20粒Cashew nuts X 20
香蔥 20條Chives X 20
玉米殿粉水100毫升Corn starch water 100 ml
***自選: 小米辣 1-2 條(辣味愛好者) Optional: Chili 1-2 (Spicy lover)
***自選: 黑醋1/2茶匙Optional: Dark vinegar 1/2 tea spoon
醃製Marinate
鹽1/2茶匙Salt 1/2 tea spoon
生粉1/2茶匙Flour 1/2 tea spoon
蛋清X 1 Egg white X 1
水1 湯匙Water 1 table spoon
生抽1 湯匙Light soy sauce 1 table spoon
米酒 1 湯匙Rice wine 1 table spoon
老抽1/2 湯匙Dark soy sauce 1/2 table spoon
糖 1 茶匙Sugar 1 tea spoon
生粉 1 茶匙Corn starch 1 tea spoon
將雞大腿切成小塊
Cut chicken thighs into small pieces
用鹽和生粉醃製
Marinate with salt and flour
加蛋清,雞肉會更嫩
Add egg white, chicken will be so tender
this way
醃製至少30分鐘
Marinate them at least 30 minutes
薑和大蒜切片
Slice the ginger and garlic
在平底鍋裡加一些油
Add some oil in the frying pan
加入切成薄片的薑和大蒜
Add sliced ginger and garlic
加入雞大腿並翻炒
Add chicken thighs and pan fry them
直到雞肉看起來八成熟
Until the chicken looks 80% cooked
加花椒
