東坡肉 Braised Pork Belly (Dongpo Meat)

材料 Ingredients:
五花腩500克 Pork belly 500g
米酒 2湯匙Rice wine X 2 table spoons
蔥 1支 Scallion X 1 stick
繩1米Rope 1 meter
葉2 片Leaf X 2
薑片 6片
Ginger slice X 6
蔥 4支
Scallion X 4 sticks
水 120毫升 Water X 120ml
紹興酒150毫升 Shaoxing wine X 150ml
老抽2湯匙Dark soy sauce X 2 table spoons
冰糖(根據您的口味)Crystal sugar (as your taste)
八角茴香 6粒 Star anise X 6
花椒1茶匙Sichuan peppercorn X 1 tea spoon
燒開水,把五花肉放進鍋裡
Boil water and put the pork belly in the
pot
加入蔥和米酒
Add scallion and rice wine
煮約15分鐘
Boil for about 15 minutes
取出並切成小方塊
Take out and cut into small square cubes
用繩子綁起來
Tie them with ropes
將葉子放入鍋中
Place leaves in the pot
放生薑片和蔥
Put sliced gingers and scallion on top
把五花肉放在上面
Put pork belly on top of them
加水
Add water
加紹興酒
Add Shaoxing wine
加老抽
Add dark soy sauce
加冰糖
Add crystal sugars
用中火煮
Boil with middle heat
加八角茴香
Add star anise
加花椒
Add Sichuan peppercorn
蓋鍋煮約1小時
Cover the pot and boil for about 1 hour
將五花肉放入較小的鍋中
Take out each pork belly in a smaller pot
加大鍋裡的醬汁
Add the sauce from the big pot
放入蒸鍋裡
Put them in the steamer
蒸約1.5小時
Steam for about 1.5 hours
蒸更久,更嫩
Steam longer, more tender
肉太軟嫩了
The meat is so soft and tender
