材料 Ingredients

豬腳X 2 Pig Trotter X 2

生薑 200Ginger X 200g

(沒有懷孕可用生薑)

鎮江香醋 X 1.4L Chinkiang Black Rice Vinegar X 1.4L

黑糖 4湯匙  Brown Sugar X 4 Table spoons

冰糖 150  Rock sugar X 150g

X12  Egg X 12

Water


 

我讓屠夫把每條腿切成四塊

I asked the butcher to cut each leg to 4 pieces

簡單清洗一下

Simply clean a bit

將它們放入裝有水的鍋中,一起煮15分鐘

Put them in a pot with water and boil for 15 minutes

污垢會浮在上面,清洗並放在一邊

The dirt will float on top, clean and put aside

1L

Boil 1L vinegar

煎薑,直到表面乾燥 (不要下油)

Pan fry the ginger, until the surfaces are dry (DON’T USE OIL)

Add brown sugar

Add rock sugar (Adjust the sweetness according to your taste)

將豬肉放入鍋中

Put the pork in the pot

再加醋,直到它覆蓋所有材料

Add vinegar again until it covers all the ingredients

蓋上鍋蓋轉中火

Cover the pot and turns to middle heat

煮雞蛋約15分鐘

Boil the eggs for about 15 minutes

剝殼前,先用勺子輕輕打碎

First, use a spoon to gently break the shell

因為您可以輕鬆卸下外殼

because you can remove the shell easily

簡單清洗一下

將所有雞蛋放入鍋中

Put all the eggs in the pot

確保所有雞蛋都能吸收醬汁

小火:煮約 1.5 小時

Low heat: Cook them for about 1.5 hours

我個人喜歡等一晚再吃

I personally love to wait one night before eating

因為豬肉會很軟=]

Because the pork will be so soft =]

苦瓜X 1 Bitter melon X 1

X3  Egg X 3

Salt

Oil

如果使用冷凍苦瓜, 請在冷水中解凍

If you are using frozen bitter melon, unfreeze in the cool water

苦瓜切薄片

Cut the bitter melon into thin slice

再切成小方塊

Then cut into small cube

雞蛋放入碗中並攪拌

Put eggs in a bowl and stir them

煎鍋上加些油

Add some oil on the frying pan

炒蛋至半熟, 取出備用

Scrambled eggs until half cooked, set aside

煎鍋上加些油

Add some oil on the frying pan

炒苦瓜

Pan fry the bitten melon

苦瓜炒至出水, 加蛋

Fry bitter melon until water comes out, then add egg

中火: 炒至苦瓜變軟

Medium heat: fry until the bitter melon becomes soft

加鹽並攪拌

Add salt and stir

材料 Ingredients

馬鈴薯X 1000 Potato X 1000g

6g  Salt 6g

玉米澱粉 120g  Corn starch 120g

Oil

 

馬鈴薯去皮

Peel the potato

切薄片

Cut into thin slice

切幼長條

Cut into thin stripe

切成小方塊

Cut into small cube

加水過濾澱粉

Add water to filter the starch

煎鍋上加些油

Add some oil on the frying pan

加馬鈴薯

Add potato pieces

炒熟馬鈴薯至半透明

Pan fry them until the potatoes turns transparent

加鹽並攪拌

Add salt and stir

加玉米澱粉並攪拌

Add corn starch and stir 

準備一張保鮮紙

Prepare a cling paper

把所有的馬鈴薯放在上面

Put all the potatoes on top

加另一張保鮮紙

Add another cling paper

折疊並封上邊緣

Fold and close the edges

按壓並使馬鈴薯變平變硬

Press and make the potatoes flat and solid

取下保鮮紙

Remove the cling paper

切成長形

Cut a nice rectangle shape

留一些下次早餐用, 放冰箱

Save some for next breakfast, store in the freezer

在煎鍋中加入油

Add oil in the frying pan

煎薯餅

Pan fry the hash brown

與番茄醬完美搭配

Perfect match with ketchup
