日式咖哩吉列豬扒飯Japanese curry pork Tonkatsu rice 

快速簡易煮食 FAST & SIMPLE RECIPE

材料 Ingredients

豬扒X 2  Pork Steak X 2

馬鈴薯X 1 Potato X 1

洋蔥X 1 Onion X 1

小蘿蔔X 2  Carrot X 2

日式咖哩磚 3-4  Japanese curry bricks X 3-4 

全蛋液 X 1 Egg X 1

麵粉 適量  Flour (Appropriate)

麵包糠 適量 Bread crumbs (Appropriate)

Oil

Salt

黑胡椒粉 少許  Black pepper(A little)


豬扒洗淨,灑上鹽和黑椒

Clean the pork, sprinkle with salt and black pepper

用三隻碟分別放入蛋液、麵包、糠麵粉,將豬扒按次序沾上麵粉、蛋液、麵包糠

Put egg liquid, bread, crumb flour on three plates respectively, dip pork chops in flour, egg liquid, bread crumbs in order

油炸豬扒不能用大火, 中細火慢慢炸便可

洋蔥、蘿蔔、薯仔去皮切塊

加水加蓋煮10

中細火煮軟馬鈴薯可關火

食材Ingredients:

糯米 200glutinous rice 200g

臘腸2 Chinese preserved pork sausage X 2

冬菇 6Shiitake mushrooms X 6

 

調味Seasoning:

生抽(醬油) 1湯匙light soy sauce X 1 spoon

老抽 1茶匙dark soy sauce X 1 tea spoon

1/2 茶匙 Sugar X 1/2 tea spoon

蠔油1/2 茶匙Oyster sauce X 1/2 tea spoon


 

糯米用水浸3小時或以上

Soak glutinous rice in water for 3 hours or more

糯米瀝乾水份

Drain the glutinous rice

糯米蒸1小時

Steamed glutinous rice for 1 hour

冬菇用水浸軟

Soak Shiitake mushrooms in water until it’s soft

臘腸放入熱水中去油

Put the sausage in hot water to remove the oil

冬菇切粒

cut Shiitake mushrooms into pieces

臘腸切粒

cut the sausage into pieces

不需下油, 臘腸粒炒熱

No need to add oil, stir-fry the sausage pieces

讓臘腸出油份

let the sausage out of the oil

冬菇炒熟

Stir-fried mushrooms

下糯米

Add the glutinous rice

調味料: ,  生抽, 老抽,蠔油

Seasoning: Sugar, Light Soy Sauce, Dark Soy Sauce, Oyster Sauce

用中慢火炒勻糯米

如果還未夠熟或稔, 可以加水

米酒 2湯匙Rice wine 2 spoons

 1  Green onion X 1 stick

薑片 4小塊  Ginger slices X 4 small pieces

五香粉 five spice powder

蒜蓉 2湯匙Minced garlic paste X 2 spoon

 

醬汁Sauce:

辣椒油 10茶匙chili oil  X 10 tea spoons

蜜糖1/2茶匙Honey X 1/2 tea spoon

生抽4茶匙light soy sauce X 4 tea spoons

麻油1/2茶匙sesame oil X 1/2 tea spoon

花椒油 2 Sichuan peppercorn oil X 2 drops

 


 

水微滾後,放入五花腩、花椒、鹽、米酒

冰糖 150  Rock sugar X 150g

玉米澱粉 120g  Corn starch 120g

Oil

 

馬鈴薯去皮

切薄片

切幼長條

Cut into thin stripe

切成小方塊

Cut into small cube

加水過濾澱粉

煎鍋上加些油

加馬鈴薯

加鹽並攪拌

折疊並封上邊緣
