材料 ingredients:

熟蝦X 23 Cooked Shrimp X 23

澄麵皮Har Gow Crystal Skin

竹筍 100 Bamboo Shoot 100g

 

醃料Marinade:

2/3 茶匙 Salt 2/3 tea spoon

1/3 茶匙Sugar 1/3 tea spoon

白胡椒粉 1/3 茶匙White pepper 1/3 tea spoon

紹興酒 1茶匙Shaoxing wine 1 tea spoon

麻油 2/3湯匙Sesame oil x 2/3  tea spoon

玉米澱粉 1茶匙Corn starch 1 tea spoon

只切一半

Cut half only of the shrimp

Salt

Sugar

白胡椒White pepper

紹興酒 Shaoxing wine

麻油Sesame oil

玉米澱粉 Corn starch

蒸:20分鐘

Steam: 20 minutes

自由選擇Optional :

細香蔥 (少許) Chive (some)

 

打蛋

Break the egg

拌勻

Mix well

加水

Add water

加入豆腐, 切成小塊

Add the tofu and cut them in small pieces

20分鐘

Steam for 20 minutes

小心取出

Take out carefully

加生抽

Add light soy sauce

加麻油

Add sesame oil

鹽(少許)Salt (a bit)

蜜糖 1 湯匙Honey X 1 table spoon

Oil

搗碎大蒜

Mash garlic

小火:用油煎大蒜

Low Heat: Pan fry garlic with oil

當有煙霧和氣泡時將它們取出

Take them out when there is some smokes and bubbles

Mash peanut

花生放入同一個碗裡

Add peanut in the same bowl

放入鍋

Put in the frying pan

Boil the chicken feet with lime juice for about 5 minutes

將鳳爪放入冰水約10分鐘

Put the chicken feet in the ice water for about 10 minutes

Cut the nails

取出骨頭

Remove the bone

Mash the garlic
